Microsoft has released 10 of the developer hands on labs that we had access to at the SharePoint Conference 2009 here. The labs are designed for use on the VPC images we had in the lab, but their easy enough to follow through on any SharePoint 2010 development machine and they give you a great place to start when learning SharePoint 2010. I highly recommend them.
